Believe me, the onion is a small part of this dish.\u00a0 This is my friend <a href=\"https:\/\/valeriecomer.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Valerie Comer<\/a>&#8216;s recipe, and I highly recommend you explore the other recipes in her &#8220;Healthy Recipe Box&#8221; wiki.\u00a0 Here&#8217;s the link to <a href=\"http:\/\/healthyrecipebox.pbworks.com\/w\/page\/17373778\/Beef%20and%20Lentil%20Stew\" target=\"_blank\" rel=\"noopener noreferrer\">Beef and Lentil Stew<\/a>.\u00a0 The recipe says it serves six, and I&#8217;d offer those are generous serving sizes.<\/p>\n<p>Place in a large heavy saucepan over medium heat:<\/p>\n<p>1 pound lean <span style=\"font-weight: bold;\">ground beef<\/span><br \/>\n1 medium-sized <span style=\"font-weight: bold;\">onion<\/span>, chopped<\/p>\n<p>Saute until beef is browned and the onion is translucent.<\/p>\n<p>Then add:<\/p>\n<p>2 medium-sized <span style=\"font-weight: bold;\">carrots<\/span>, thinly sliced<br \/>\n1 cup thinly sliced <span style=\"font-weight: bold;\">mushrooms<\/span><br \/>\n2 cloves <span style=\"font-weight: bold;\">garlic<\/span>, grated<br \/>\n1 28-ounce can <span style=\"font-weight: bold;\">tomatoes<\/span> (about 4 cups)<br \/>\n1 tablespoon <span style=\"font-weight: bold;\">soy sauce<\/span><br \/>\n2 teaspoons <span style=\"font-weight: bold;\">basil<\/span> (2 tablespoons fresh chopped)<br \/>\n1 teaspoon <span style=\"font-weight: bold;\">marjoram<\/span><br \/>\n1 teaspoon <span style=\"font-weight: bold;\">chili powder<\/span><br \/>\n1\/2 teaspoon <span style=\"font-weight: bold;\">cumin<\/span><br \/>\n1\/2 teaspoon <span style=\"font-weight: bold;\">oregano<\/span> (2 teaspoons fresh chopped)<\/p>\n<p>Bring to a boil, then add:<\/p>\n<p>1 cup dry <span style=\"font-weight: bold;\">lentils<\/span><\/p>\n<p>Return to a boil; cover and lower heat and allow to simmer for about 40 minutes, until lentils and vegetables are tender. Be careful it doesn&#8217;t run dry; you may have to add a little water.<\/p>\n<p>For me, there were some unusual spices, but I bought them, and I haven&#8217;t regretted that decision &#8212; they really make this recipe.
