There&#8217;s some great commentary before the recipe on the linked site, and I highly encourage you to check it out, but if you just want a great lasagna recipe and don&#8217;t care about how it came about, here it is:<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>* 9 whole wheat lasagna noodles<br \/>\n* 1 tablespoon olive oil<br \/>\n* 1 medium onion, chopped<br \/>\n* 3 cloves garlic, minced<br \/>\n* 1 pound button mushrooms, sliced<br \/>\n* 3 medium zucchini, sliced<br \/>\n* 1 medium eggplant, sliced<br \/>\n* 2 (28 oz.) cans crushed tomatoes<br \/>\n* 1 (6 oz.) can tomato paste<br \/>\n* 1 teaspoon dried basil<br \/>\n* 1 teaspoon dried parsley<br \/>\n* 1 teaspoon dried oregano<br \/>\n* 1\/2 teaspoon salt<br \/>\n* 1\/2 teaspoon black pepper<br \/>\n* 16 ounces part-skim ricotta cheese<br \/>\n* 1\/2 cup grated Parmesan cheese<br \/>\n* 1 cup grated mozzarella cheese<\/p>\n<p>Instructions:<br \/>\n1. Prepare the lasagna noodles according to directions. When cooked through, set aside on paper towels to dry. (If you decide to go with no-cook noodles, they work great.)<br \/>\n2. Saut\u00e9 the onions and garlic in the olive oil over medium heat. Add the sliced mushrooms, zucchini and eggplant, and cook until tender. Mix in the crushed tomatoes and tomato paste. Season with spices. Simmer for five to 10 minutes.<br \/>\n3. In a small bowl mix together the ricotta and Parmesan cheeses.<br \/>\n4. Evenly coat the bottom of a 9-inch by 13-inch baking dish with about a half cup of the sauce. Remove another half-cup of the sauce and set aside.<br \/>\n5. To assemble the lasagna: Top the sauce in the baking dish with an even layer of noodles, cutting to fit the pan if necessary. Spread half of the cheese mixture over the lasagna noodles. Then layer with half of the remaining sauce mixture. Repeat.<br \/>\n6. Top the final layer of noodles with the reserved half-cup of sauce. Sprinkle with grated mozzarella cheese.<br \/>\n7. Cover with tin foil and bake in a 350\u00b0F oven for 30 minutes.
