Guacamole Pizza?
Most of you may not know that on January 1st, I chose to become a vegetarian. I made this choice purely for personal health reasons. I have no political motivations behind this choice. In fact, a friend of mine gave me a button a few weeks ago that reads: “I’m a vegetarian not because I love animals, but becaue I hate plants.”
Within 30 days, my blood pressure and cholesterol had both dropped. I’m still working on the weight loss–that’s related to reducing daily caloric intake, and I’m making progress on that as well. What does that have to do with guacamole pizza? That’s what I made for dinner tonight. Strangely, I’ve been craving guacamole a lot lately. Here’s the recipe for guacamole pizza–this is very quick and easy:
Ingredients:
- One microwave four cheese thin crust DiGiorno pizza
- One tomato
- One ripe avocado
- One slice of onion
- Seasonings to taste (oregano, basil, red pepper, seasoned pepper)
To make the guacamole: Slice the avocado (it should be soft), scoop the meat into a bowl and toss the skin and pit. Dice the onion and the tomato. Leave some tomato (either diced or sliced) for the top of the pizza if you wish. Mix the onion and tomato with the avocado. (If you may have any avocado left over, mix a little lemon juice in to keep the color from turning dark after exposure to the air.)
Remove the pizza from packaging, add diced tomato and spices to top as desired. Cook in microwave according to instructions (This should work fine with an oven-baked pizza as well–or even any of the delivery options available to you). When it’s done, slice and scoop guacamole on top. Enjoy.
Warning: This is messy, but I enjoyed it.
