Still on track, but I’m not gaining any ground yet. I’d prefer to do that.
I made chicken enchiladas for the first time tonight, and I think they turned out pretty well. They were more flavorful than many I’ve eaten in restaurants. Hubby suggested I spread more picante sauce to the edges and use a little less sour cream on the innards. I eyeballed the sour cream, so that may not be a bad suggestion. Easy enough to spread on more picante sauce. We put leftovers into the freezer.
I think I may have another recipe we can add to the rotation. Thanks to Tambo who shared it with me.
Good morning. I know it is early morning here in Texas. We know each other from FM Writers. have Alba’s chili receipe which was awesome. My husband and I and one child ate the whole pot in one day. We just kept going back for another mug and next thing we knew, it was gone.

Sure. In reality, Tambo’s recipe came from the Kraft foods site: http://www.kraftfoods.com/kf/recipes/creamy-chicken-enchiladas-54290.aspx, so it’s not a big secret. It is a good recipe, though.
My hubby has an awesome chili recipe, so I’m not sure he’d be in a hurry for me to make a different one, but it would be interesting to compare.
Glad they turned out well! We almost always have some leftover chicken so it’s a good way to use it up. I usually cut back on the fresh cilantro by about half, it’s just a bit much for us, but I know some folks like lots and lots of cilantro.

Let me know how they fare in the freezer. I have a favorite recipe for Sour Cream Chicken Enchiladas that I would love to be able to freeze, but I’ve always been afraid of freezing with sour cream in it.
